Oracle was kind enough to share with us some of their demos of OTM features. I'll use this thread for gathering them all together and future demos will be posted here also.
In addition to the demos, Doug has share the following information about how Oracle intends to share information about new Oracle OTM features and enhancements:

At the SIG Conference, attendees asked if there was additional information available on the enhancements we provide in a software release. For key features, our curriculum team works with development to create Transfer of Informations (TOIs). These TOIs are available to you via metalink (https://metalink.oracle.com/). Once logged in, simply search for metalink note 452212.1 using Quick Find (near the top left side of the screen). This link provides instructions for accessing the TOIs.
For our latest cumulative update (5.5 CU3), we have provided TOIs for the following features:- Container optimization
- Dock scheduling
- Freight forwarding
- Fusion Transportation Intelligence
